Eco-friendly Cuisine
If there’s one place we can take positive steps to protect the environment, it’s in the kitchen. Ours is the biggest in the city, and we don’t skimp when it comes to ecofriendly practices. Did you know we were the first convention centre to use green tableware? Today, almost all the disposable containers and tableware we use are biodegradable. And to avoid food waste, our cooks come up with imaginative ways to make the most of these ingredients. Any food or extras we can’t use are given to charity to help alleviate hunger in Québec City. We donate hundreds of kilos of food every year.
From pantry to table, we keep up with innovations and are constantly tweaking our processes to make sure we’re ecofriendly as we serve up local cuisine. Thanks to our partnerships with local farms, the food we serve at the Québec City Convention Centre usually highlights products from Québec. In 2022, Capital HRS obtained, among other things, the Fourchette bleue certification of the Exploramer program, which promotes a sustainable management of the St. Lawrence marine resources and ecosystems.
