F&B : Managing attendees’ health and allergies
During the games, the Québec City Convention Centre served up over 70,000 meals (that’s 4,500 kilograms of food per day!).
“Event participants provided our F&B team with a list of food allergies and intolerances so that our chef and his brigade could prepare special meals,” Mr. Poirier said. “In fact, there was even a meal station reserved solely for attendees who required special meals.” Meals were served by staff of the Québec City Convention Centre in order to mitigate the propagation of illness and infections. Signs were set up at each station and listed the ingredients in each dish.
Mr. Prévost said: “After each service, the Centre’s sanitation team completely cleaned and disinfected the cafeteria and dining area. Honestly, we couldn’t have asked for a better team. They took care of every square inch of the Centre twice a day!”
